RECIPE: HEALTHY PANCAKE RECIPE



Pancakes are a great breakfast idea and these are really easy to make and don't take too long to make and they taste great! You could easily serve these up with some chocolate treats for a desert idea. 



35g of Oats
90g Yogurt -  use enough to cover the oats well.
  add vanilla essence if your using a plain yogurt. 
2tbsp sweetener 
two eggs 
Rapeseed Oil - less saturated fat than all other commonly used cooking oils and fats


*Mix together the yogurt and oats and leave in the fridge overnight if possible. 

*Next up mix in the other ingredients - 2 eggs and sweetener This is your mixture, it should resemble a batter mix.

*Heat some Rapeseed Oil in the pan to prevent the mix from sticking. You want to heat your pan on a low heat. When the pan is hot use a ladle and pour in your mixture. I tend to do a nice medium size pancake but its up to you whether you prefer a smaller size or larger size.

*When one side is golden and the top has started to bubble/ gone yellowish then it's time to flip it over and cook the other side through, this shouldn't take long.

*Repeat until you've used up all of your batter mix. 



Serve with whatever topping you like. 
My favourite is Banana and Nutella but its up to you! 
Berries, Yoghurt, Cream, Strawberries, Blueberries the possibilities are endless!

I thought i'd share a simple recipe for some yummy healthy pancakes which i've added the Beta Heart powder into. These are really easy to make and are healthy alternative to normal pancakes.

First up you will need :
35g of Oats
90g Yogurt - you can use fat free natural yogurt, I prefer Greek Yogurt. You want enough to cover the oats well. you may want to add vanilla essence if your using a plain yogurt. 
2tbsp sweetener 
two eggs 
1 scoop of Beta Heart powder 

First mix together the yogurt and oats and leave in the fridge overnight if possible, if you forget to leave overnight you want to leave it for a good hour or so.

Next up mix in the other ingredients, 2 eggs, sweetener and Beta Heart powder. This is your mixture, it should resemble a batter mix.

Heat your pan and spray some Fry Light to prevent the mix from sticking. You want to heat your pan on a low heat. When the pan is hot use a ladle and pour in your mixture. I tend to do a nice medium size pancake but its up to you whether you prefer a smaller size or larger size.

When one side is golden and the top has started to bubble/ gone yellowish then it's time to flip it over and cook the other side through, this usually doesn't take too long.

Repeat until you've used up all of your batter mix. Serve with whatever topping you like. I love banana and Nutella, it's my favourite pancake topping! What do you have on your pancakes?

FOOD: BANANA LOAF RECIPE DELICIOUSLY ELLA


what you will need 

Flour- I used Self Raising Flour
Baking Powder
5 Over Ripe Bananas 
1 cup of Almonds
2 cups of Pecans
1/2 cup of Maple Syrup
3 Tablespoons of Chia Seed
2 tablespoons of Cinnamon.

I recently followed a Banana Loaf recipe from the Deliciously Ella webiste, I made a few tweeks because I either didn't have something or I left out Cinnamon because I really don't like it.

preheat oven to 145c

Blend together the almonds and pecans, I didn't have any pecans so just used Almonds and this was fine, blend till it resembles a flour.
Mix this together with the flour, maple syrup, chia seed and cinnamon, as I said I left out cinnamon

Next mash up the bananas until smooth, stir them into the flour mix. This should be really nice and sticky. 

Grease a loaf tin with coconut oil, you could use normal oil or butter if you don't have coconut oil.

Bake for about an hour, until it's golden. 

I found this recipe super easy to follow and the loaf tasted amazing! 
The Chia seed made the loaf nice and crunchy.
I'd make it again, it's a great way to use up overripe bananas 







FOOD: IT'S PANCAKE DAY


WHAT YOU WILL NEED: 

35g PORRIDGE OATS
1/2 VANILLA MULLER LIGHT
SWEETENER
2 EGGS 
YOUR TOPPINGS, ( I LOVE BANANA AND NUTELLA) 

- this recipe makes about 3 pancakes, it's so easy to double up to make more.
I double up the oats and muller light but only use 3 eggs. 

I have featured these pancakes on my blog before. they are a slimming world syn free pancake. They are super easy to make and taste so so good. 

To start you need to mix your porridge oats and muller light together and put in the fridge over night

Take your mixture out of the fridge the next morning and mix in your egg and 2 tablespoons of sweetener. 

Preheat your pan, you want a low - medium heat. If your pan is too hot you will just burn the pancakes and inside wont cook properly. 

When the mixture starts to cook you will notice bubbles forming and the mixture will start turning a golden colour. This is when it's time to flip your pancake. I use a silicone spatula to lift the edges before I flip my pancake. 

The second side doesn't take too long so keep an eye on it. 

When your pancakes are done you can top with your choice of toppings. I love banana and nutella. Today I made streaky bacon and maple syrup to go with our pancakes. 








 


FOOD: BIRMINGHAM BALTI


Many of you may know but the Balti is believed to have evolved in Birmingham in the 1970's so what better dish to enjoy when visiting the city. There are so many balti houses in Birmingham. 
I decided to cook my own balti today, this is the first time i've ever made a curry.  I thought it was going to be the hardest thing ever but I did it and it tasted so good. Heres the recipe I followed below. We got some naan bread and poppadoms and had a right feast it was soo good. 

Heres a great feature over on the Travelodge blog about foods from Birmingham 

ingredients: 
chicken thighs x4 boned and skinned
cooking oil spray 
1 medium onion sliced 
1 red pepper and 1 yellow pepper, thin slices 
1 tablespoon of cornflower 
150g fat free natural yogurt
 1 tablespoon of curry powder ( mild or medium) 
2 garlic cloves ( thin slices)
227g chopped tomatos 
fine chopped coriander 
sea salt and black pepper 

- spray a large frying pan with low fat cooking oil spray and bring pan to a medium heat, once the oil spray has dissolved add onions to the pan and cook for about 5 minutes until the onions are soft and browned off. 
- whilst you are cooking the onions start to trim the fat off the chicken thighs and cut into desired portions, I like my chicken in smaller pieces. Season as desired. 
- Add the chicken and peppers to the pan with the onion and cook for about 3 minutes. 
- In a bowl mix together the cornflower and 2 tablespoons of water, add the yogurt to the bowl and mix together. 
-sprinkle curry powder over the chicken and vegetables, add the garlic and cook for around 1 minute. 
- pour the tomatoes and yogurt mixture to the pan, also 150g of water and then the coriander. 
-Bring to a simmer and cook for 25- 30 minutes. The chicken should be cooked through and tender and the sauce should be thick.

FOOD: STRAWBERRIES AND CREAM VALENTINES SANDWICH


The lovely people at Roberts Bakery and nutritionist Dr Carina Norris have put together this special romantic valentines sandwich using Roberts Soft & Fluffy White bread.

What you will need 

Roberts Soft and Fluffy White Bread*
Strawberries
Rocket 
Cottage Cheese or soft cheese
Black Pepper

First of all lay the rocket on the bottom slice of bread, then drain the cottage cheese and layer on the cottage cheese and place the strawberries on top. Then season with the black pepper and pop on your top piece of bread. I've used a cookie cutter to make them into hearts to make them more Valentines themed. 

I think this is a really simple quick idea for Valentines Day, perfect if you only have a short time to spend with your partner. Or they have to work, why not make them a packed lunch? 




FOOD: SLIMMING WORLD PANCAKES



As you may know for the last month or so i've been trying to eat healthily and i've been going to the gym, so far i've lost 1stone and 2lbs. I still have a long way to go, I've been following some slimming world recipes however I don't go to slimming world or anything. I'm just watching what I eat and I've made some drastic changes to my diet. I think this recipe is so easy and with pancake day around the corner a really good healthier option.
I actually followed VIPXO's recipe which you can see here, she's done really well with Slimming World and she's a real inspiration for me. Theres more recipes on her blog aswell.


WHAT YOU WILL NEED: 
FAT FREE YOGURT, I USE A MULLER LIGHT. - HALF A TUB
35g OF PORRIDGE OATS
SWEETENER - 2 TBSP
TWO EGGS

Mix together the oats and the yogurt, leave this overnight in the fridge. I've tried leaving it for about an hour and this works aswell.
The next morning mix in the eggs and sweetener, this is your mix. 
Preheat a medium heat pan, spray with fry light. Pour you mixture in the pan, I made two at a time, I prefer these small american style pancakes. 
After a few minutes flip over your pancake, I use a silicone spatula to lift up the edges to check the other side is ready before flipping it over. 
Once the other side is done pop it on a plate with whatever you want, I try to go for a syn free option usually fruit. I've tried it with banana and blueberries mmm, today I went for strawberries, raspberries and blueberries. 

I think these are so good. The consistancy inside is quite fluffy but remember inside is yogurt and oats so the texture is kinda like rice pudding. I love them I think they are a great alternative to naughty pancakes which you can also have on Slimming World but it's gonna cost you 7 syns.  

LIFESTYLE: CURRYS STUDENT COOKBOOK - QUESADILLAS


HERE IS A REALLY REALLY EASY RECIPE FOR MAKING QUESADILLAS. 
THEY ARE MY FAVOURITE AND THESE ARE SO EASY AND QUICK TO MAKE.
 YOU WILL NEED: 
-CHICKEN ( OR OTHER FILLING) 
-ONION (SLICED)
-PEPPERS (SLICED)
-CHEESE ( I FIND RED LEICESTER THE BEST)  (GRATED)
-TORTILLAS 



 1. PUT A LITTLE OIL INTO YOUR PAN AND GIVE IT A FEW MINUTES TO HEAT UP. THIS IS ONLY TO STOP THE TORTILLA STICKING SO YOU ONLY NEED A TINY AMOUNT.
2. POP YOUR TORTILLA IN THE PAN AND START ADDING YOUR TOPPINGS, YOU MAY NOT NEED AS MUCH AS I HAVE USED BUT ITS UP TO YOU! TRY NOT TO GET CHEESE ON THE PAN AS THIS WILL BE MESSY.

3.ONCE YOUR TOPPINGS ARE INSIDE FOLD THE TORTILLA IN HALF LIKE SO... LEAVE FOR A FEW MINUTES UNTIL THE BOTTOM IS BROWN/GOLDEN LIKE THE NEXT IMAGE.


4. TURN YOUR TORTILLA OVER AND AGAIN MAKE SURE ITS GOLDEN BROWN ON BOTH SIDES. WHEN IT IS THEN ITS DONE! THEN CUT IN HALF AND YOU CAN EITHER EAT AS A SNACK OR MAYBE HAVE SOME SALAD OR FRIES TO GO WITH IT ( I PREFER CURLY FRIES AS THEY ARE FUN )

AS I SAID THIS IS SUCH AN EASY QUICK RECIPE, I'VE USED PRECOOKED CHICKEN TO MAKE IT QUICKER AND EASIER BUT YOU CAN USE ANYTHING FROM SANDWHICH MEAT TO FROZEN CHICKEN WITH BREADCRUMBS, ITS UP TO YOU!
